new and exciting vegetables

so my recent encounters with the South Beach diet did not leave my waistline much smaller (although admittedly i wasnt hard core on the diet, which is probably why), but it did give me a new set of cooking and eating practices which i believe to be more healthy and something i can stick with to feed my family.

behold my spaghetti squash:

once you manage to find a store in town that carries it (i searched 4 or 5 stores before i found it at the one right around the corner from my house...), cut it in half and bake it for 1 hr at 350*. then let it cool and take a fork and scrape out the inside and Wa La - Spaghetti Squash! i got half of a gallon bag full and have no idea what to do with it now. but it's a start! :)
i am not as much "down with the sickness" as i was, drugs help. still a bit flemmy but mostly ok. just tired.
upcoming work event: next Thursday i'm doing a "Free Family Movie Night". should be rediculously easy and will earn me about 3 hrs "comp time" to leave early on Friday, which is handy because....
upcoming personal life event: we are going to the MP Ball!!! it's next Friday and i'm going with my friend Valerie on Saturday to buy a dress. (moo) i tried on my junior prom dress and it fits, suprisingly, but i dont think it's appropriate as there are slits up the sides that come waaaay too high on my thigh. did i seriously wear that to Mass? good lord.... so i'm hoping to find something classy on clearance... we'll see.
in the more immediate future, Charles is having his Lasik surgery done THIS Friday the 18th really early in the morning. We're driving out to Ft. Riley Thursday evening and staying in a hotel because we have to be to the hospital there at 6:45. should be good. he's been too busy with work to get nervous so far, but i'm sure thursday night will be touchy. also, his dad is NOT coming to visit this coming weekend and has postponed it until next weekend. .........

Maybe if your good fortune continues the visit will be postponed again...

well, they only visit once very two or three years and they come up saturday morning and leave sunday morning, so i think i can handle it.
